Ingredients

  • 1 pound of brisket (chopped), beef barbacoa, or pork carnitas
  • 3 cups frozen diced potatoes or hash browns
  • 1 1/2 cups prepared thick-and-chunky salsa
  • 1 (4 – 4 1/2 oz) can chopped green chilies
  • Shredded Mexican Blend Cheese

Directions

  1. Thaw potatoes ahead of time, or add potatoes to a large nonstick skillet over medium heat until soft.
  2. Add thawed WG meat to the pan. Heat until warm.
  3. Stir in salsa and chilies; continue cooking 8 to 10 minutes or until potatoes are lightly browned, stirring occasionally.
  4. Sprinkle with cheese and let stand for 5 minutes.

Use hot chilies and spicy chunky salsa for more of a kick!
