Cowboy Breakfast Wraps

Ingredients

  • 4 oz of your favorite meat – brisket, beef barbacoa, shredded beef
  • 4 large corn tortillas
  • 2 TBSP butter
  • 1/2 cup red pepper, diced
  • 1/2 cup diced green chilies
  • 1/2 tsp salt
  • 1/4 tsp ground pepper
  • 8 eggs, beaten
  • 1/4 cup canned black beans, drained
  • 1/2 cup grated Monterey Jack cheese

Directions

  1. Wrap tortillas in heavy duty foil and heat.
  2. In a large fry pan, melt butter. Add meat, red pepper, chilies, eggs, salt, and pepper. Cook over low heat stirring contantly. Just before eggs finish cooking, add drained black beans and continue cooking until eggs are firm.
  3. To assemble, divide egg mixture equally between warmed tortillas. Top each with cheese; wrap and serve.
