Slow Cooker Beef Soup

Ingredients
2 lbs. of brisket or shredded beef
Olive oil
1 large onion, chopped
4 carrots, sliced
3 stalks celery, diced
2 garlic cloves, minced
Handful of fresh parsley
2 bay leaves
6 cups beef stock
3 large potatoes, peeled and cubed
½ lbs. pasta, or noodles of your choice, optional
Salt and pepper to taste

Directions
Add onion, carrots, celery, and garlic to a large pot with olive oil.
Cook over medium heat until they start to brown.
Add potatoes, bay leaves, and parsley.
Add your thawed meat.
Transfer to crockpot and cook on low for 8-10 hours.
Stir and discard bay leaves. At this point, you can add cooked pasta.
Serve and enjoy!
