Chili Con Carne

Ingredients

  • 2 lbs. of your choice of meat, reheated
  • 1 tbsp. oil
  • 2 garlic cloves, minced
  • 1 onion, diced
  • 1 red bell pepper, diced
  • ¾ cup beef broth/stock, divided
  • 2 – 15 oz. red kidney beans or chili beans, drained
  • 15 oz. crushed tomato
  • 6 oz. tomato paste
  • 1.5 tsp. onion powder
  • 1.5 tsp. paprika
  • 1.5 tsp. cayenne pepper
  • 1 tsp. salt
  • ½ tsp. pepper
  • Optional: tortilla chips, sour cream, avocado, shredded cheese, cornbread

Directions

  1. Reheat meat per our Reheating Instructions.
  2. While meat is reheating, saute garlic, onion, and bell pepper in oil until brown. OR you can skip this and sub minced garlic and onion powder.  No need to saute! Just add minced garlic, onion powder, and bell pepper to the crockpot with everything else!
  3. Add ½ cup beef broth and bring to a simmer. Add into crockpot.
  4. Add beans, tomato, tomato paste, remaining beef broth, and spices. Combine.
  5. If using beef barbacoa or pork carnitas, drain off liquid, shred, and add to crockpot. If using shredded beef, just drain and add to crockpot. If using beef brisket, drain, cut into chunks, and add to crockpot.
  6. Cook on high for 4 hours or low for 8 hours. Stir before serving.
  7. Dish into a big bowl and garnish with your favorite toppings: sour cream, avocado, shredded cheese, etc.
  8. Serve with corn chips or cornbread.
  9. Enjoy!
