While meat is reheating, saute garlic, onion, and bell pepper in oil until brown. OR you can skip this and sub minced garlic and onion powder. No need to saute! Just add minced garlic, onion powder, and bell pepper to the crockpot with everything else!
Add ½ cup beef broth and bring to a simmer. Add into crockpot.
If using beef barbacoa or pork carnitas, drain off liquid, shred, and add to crockpot. If using shredded beef, just drain and add to crockpot. If using beef brisket, drain, cut into chunks, and add to crockpot.
Cook on high for 4 hours or low for 8 hours. Stir before serving.
Dish into a big bowl and garnish with your favorite toppings: sour cream, avocado, shredded cheese, etc.
