Carnitas Tamale Pie

Ingredients

  • ⅔ cup flour
  • ½ cup yellow corn meal
  • 3 Tbsp. sugar
  • 1 Tbsp. baking powder
  • ¼ tsp. salt
  • 2 Tbsp. vegetable oil
  • 1 – 4.5 oz can diced green chiles
  • ⅓ cup milk
  • 1 egg
  • 1 – 14.75 oz can cream corn
  • 2-3 cups pork carnitas
  • 1 cup enchilada sauce
  • 1 cup shredded cheese
  • Olives and fresh cilantro (optional)

Directions

  1. Reheat pork carnitas per our Reheating Instructions.
  2. Preheat oven to 400.
  3. Whisk together the first five ingredients.
  4. Whisk in milk and egg.
  5. Add the cream corn, green chiles, and vegetable oil.
  6. Stir until combined.
  7. Bake in greased 9-inch square pan for 45 minutes or until set. Should be a little mushy.
  8. Poke holes in the crust with a fork.
  9. Pour the enchilada sauce over the crust.
  10. Arrange meat and sprinkle with cheese.
  11. Cover with foil and bake for 20 minutes.
  12. Then remove foil, add olives (optional), and bake for another 5-10 minutes until cheese is melted and bubbly.
  13. Cool, sprinkle with fresh cilantro, cut into slices, and enjoy!
