BBQ Burnt End Melt Sandwich

Ingredients

Makes 8-12 sandwiches.

  • Ciabatta roll, large or individual rolls
  • 2 packages Burnt Ends, reheated
  • 4 tbsp. butter
  • 1/3 cup flour
  • 2 1/4 cup whole milk
  • 12 oz. shredded sharp cheddar
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 tsp. cajun spice
  • 16 oz. elbow noodles, precooked

Directions

  1. Preheat oven to 400. Reheat Burnt Ends for 30 minutes uncovered in an oven safe pan.
  2. While the burnt ends are reheating, melt butter in a saucepan over medium heat.
  3. Add flour to hot melted butter & whisk constantly for 3 minutes.
  4. Slowly add milk while continuing to whisk, then continue to cook, whisking until sauce is thickened & bubbling.
  5. Remove from heat & stir in cheddar, salt, pepper, & cajun spice. Stir until smooth & velvety.
  6. Fold in precooked noodles.
  7. Return to low heat & stir constantly until noodles are heated through.
  8. Toast bread in the oven for 5-10 mins. Slice.
  9. Add mac & cheese. Then burnt ends on top.
  10. Optional: top with coleslaw, banana peppers, pepperoncini peppers, or pickled red onions for some crunch and acidity!
  11. Serve & enjoy!
