BBQ Burnt End Melt Sandwich

Ingredients

  • 1 ciabatta roll
  • Burnt Ends, reheated
  • 2 sticks unsalted butter
  • 2 cup flour
  • 2 quarts whole milk
  • 2 quarts grated sharp cheddar
  • 2 tbsp salt
  • 1 tbsp pepper
  • 1 tbsp cajun spice
  • 5 quarts elbow noodles, precooked

Directions

  1. Reheat Burnt Ends.
  2. Melt butter in a saucepan over medium heat.
  3. Add flour to hot melted butter & whisk constantly for 3 minutes.
  4. Slowly add milk while continuing to whisk, then continue to cook, whisking until sauce is thickened & bubbling.
  5. Remove from heat & stir in cheddar, salt, pepper, & cajun spice. Shirt until smooth & velvety.
  6. Fold in precooked noodles.
  7. Return to low heat & stir constantly until noodles are heated through.
  8. Hollow out ciabatta.
  9. Add mac & cheese, burnt ends, some cheddar, & bbq sauce.
  10. Close the sandwich & place on a panini press until cheese melts, about 1 minute.
  11. Serve & enjoy!
