Chipotle Lime Carnitas Salad

Ingredients

  • Leftover pork carnitas
  • 2 fresh corn cobs, of ½ cup tinned corn, rinsed and drained
  • ½ bell pepper, sliced
  • 1 poblano pepper, sliced
  • 5 cups lettuce, washed
  • 2 avocados, sliced
  • Lime slices
  • 1 cup cilantro lime rice, or rice of your choice, cooked

Dressing:

  • ¼ cup olive oil
  • Juice of 2 limes, or ¼ cup
  • 2 tsp. minced garlic
  • 1 tsp. honey
  • 1 chipotle chili, finely chopped
  • ½ tsp. adobo
  • ¼ cup chopped cilantro
  • 1 tsp. ground cumin
  • 1-2 tsp. salt and pepper

Directions

  1. Warm leftover pork carnitas. Use as much or as little as you like.
  2. Remove corn kernels from cobs.
  3. Place corn in a skillet over medium heat; toast until it looks toasted, about 4 minutes.
  4. Combine dressing ingredients in a shallow bowl; which until combined.
  5. Combine all ingredients in a large bowl.
  6. Drizzle with dressing and enjoy!
